The Woodcutter is the first resource extraction building you should build. It will harvest wild Trees around it, and drop the Logs off at nearby Warehouses that allow Logs in their storage space.
The Woodcutter is a temporary resource extraction building in that it harvests only wild Trees on the map. These trees do not regrow, so once the local supply is exhausted, there is limited use for this building.
Trees grown on Farms are harvested by Farmers and do not require this building to collect those resources.
One or two Woodcutters should be sufficient to survive the first few seasons before you move to farming Trees in perpetuity.
You may wish to keep one Woodcutter around to clear trees on other islands as heavily forested islands tend to be great for expanding farming.
The Woodcutter building can be moved at will without any cost to target more available Trees.
